Idly

Urad dal - 1 cup
Idly rava - 1 and 1/2 cups
Salt - to taste
  • Soak urad dal, with enough water overnight or for 4 to 6 hours.
  • Soak Idly rava,with enough water overnight or for 4 to 6 hours.
  1. Drain the water of idly rava,take handful rava and press tightly,so that excess water will drain.do this for all rava and keep aside.
  2. Grind urad dal into smooth paste,by adding little water.
  3. Now mix rava and urad dal without any lumps.
  4. Keep it covered overnight,in a warm place(or in oven),next day it will increase the size.
  5. Again mix well by adding salt to it.
  6. (Batter should be like condensed milk).

To cook idly:

  • Pour batter in idly plates or( any small vessel).
  • In a cooker or any large vessel,add 1 glass water,and put idly stand (filled with batter) and cover with tightly with lid.
  • Cook them in medium flame,for 15 minutes.
  • Insert Fork or knife into idly,if it comes out clean, idly is cooked.

Potato Kurma

Ingredients:

Potatoes - 2
Tomatoes - 3
Peas - 1/2 cup
Onion - 1
Turmeric powder - 1/2 teaspoon
Chilli powder - 1 teaspoon
Ginger garlic paste - 1 teaspoon
Coconut powder - 2 teaspoons
Cumin seeds - 1/2 teaspoon
Mustard seeds - 1/2 teaspoon
Coriander leaves

Note:
-> Potatoes: medium size take - 2
Large size take - 1
* *Peal off the skin and cut potatoes into small size.
-> Tomatoes : medium size take - 3
Large size take - 2
* * Cut tomatoes into small pieces.
-> Onion : medium size -1
* * Cut into small pieces.

Preparation:

  • Take 2 teaspoons of oil in a pan,when oil heated add cumin seeds,mustard seeds,onions.
  • Fry until onions turn to light brown color.
  • Add ginger garlic paste, saute it for 1 minute,then add tomato pieces.
  • when tomatoes are well cooked,add potato pieces,peas,coconut powder,turmeric powder,Chilli powder and salt.
  • Cover with a lid for 2 minutes.
  • Now add little(half cup) water, again cover with lid and cook for 15-20 minutes,or until potatoes are well cooked.
  • Garnish with Coriander.Serve with chapathi,or rice.

Omelet

Ingredients:

Eggs - 3
Onion - 1/2
Green chilies - 2
Garam masala powder - 1/4 teaspoon
Milk - 3 teaspoons
Coriander leaves - few
salt

Preparation:
  • Beat eggs with egg beater in a bowl.
  • Add chopped onions and green chilies(cut into small pieces),milk,garam masala powder,coriander leaves ,salt and mix well.
  • Heat pan with 1 tea spoon oil ,when heated pour egg mixture.
  • After 3 minutes turn the omelet slowly to other side and fry the other side also.

Egg Curry

Ingredients:

Eggs- 4
Onions - 2 (medium size)
Green Chilies - 2
Coriander Powder - 1/4 tea spoon
Ginger Garlic Paste - 1 tea spoonsalt

Preparation:
  • Cut onions and chilies into small pieces and fry in oil till golden.
  • Add ginger garlic paste and turmeric powder.
  • Add eggs and scramble them,then add chili powder,salt,coriander powder,curry leaves.
  • Fry for 15 - 20 minutes.
  • Serve with chapathi or rice.

Tomato Dal

Ingredients:

Toor Dal - 1/2 cup
Tomatoes - 2 medium size (cut small pieces)
Green chilies - 2 ( cut lenghtwise)
Chili powder - 1/4 teaspoon
Turmeric Powder - 1/4 teaspoon
Garlic clove -1
Cumin seeds - 1/2 teaspoon
Mustard seeds - 1/2 teaspoon
Oil (or) Ghee - 2 teaspoons
Curry leaves
Salt

Preparation:

  • In a pressure cooker, cook washed toor dal,tomatoes and green chilies for 2 whistles.
  • When dal is cooked remove the lid when pressure is off.
  • With wooden masher,mash the dal until it is soft.
  • In that add Chilli powder,turmeric powder and salt.
  • Again cook this for 5 minutes in medium flame.
  • Add popu for this dal.
Popu:

  • Take 2 teaspoons oil (or)ghee,when heated add garlic clove(cut in to small pieces),mustard seeds,cumin seeds and curry leaves,when splutter add to dal.

Coconut Chutney

Ingredients:

Coconut - 1 cup
Chana dal - 1/2 cup
Green chillies - 6 (small size)
Garlic clove - 1
Tamarind - 1 inch
Salt

Preparation:

  • Fry chana dal in low flame for 5 minutes,and let it be cool.
  • Take 2 teaspoons of oil in a pan and fry green chillies.
  • Mix all the above ingredients and make into a smooth paste in a mixi by adding little water.

For Popu:

  • Dried red chili small pieces (Endu Mirchi) - 4 no
  • Mustard seeds (Avaalu) - 1 tea spoon
  • Cumin (jeelakarra) 1 tea spoon
  • Curry leaves (Karivepaku)
  • Take one table spoon oil,toast the above ingredients and put this popu in chutney.

Peanut Chutney

Ingredients:

Peanuts - 1 cup
Red Chilies (dried) - 2 no
Tamarind - 1 inch
Garlic clove - 1
Salt

Preparation:

  • In a pan heat 2 tablespoons oil, fry dried red chilies and keep aside.
  • Then fry peanuts in low flame,and let it be cool.
  • Now mix peanuts,red chilies,tamarind,garlic clove,salt and graind them in mixi to make smooth paste by adding little water.
  • Add popu.
